That was a mouthful. Pun intended… but I make Spaghetti Squash Turkey ‘Bolognese’ ALL. THE. TIME.
Why? Read the title.
If it’s unoriginal, it’s because it’s delicious, relatively low calorie, quick and cheap. Plus, I make a super simple version that really doesn’t require much time or attention.
Ingredients for Spaghetti Squash Turkey ‘Bolognese’:
1-2 Cups Chopped White Onion
1/2 Cup Chopped Tomato (I use halved Cherry Tomatoes)
1/2 Cup of Spinach
1 tbsp Minced Garlic
1-2 Cups Pasta Sauce (I Recommend Newman’s Own)
1/2 to 1 full Spaghetti Squash (depending on the size)
1 Cup Ground Turkey
Salt, Pepper and Italian Seasoning to Taste
Bonus Ingredients:
Basil
Chopped Carrots
That’s it.
Side note: I rarely follow recipes exactly (I love to improvise) so excuse my approximation and lackadaisical instructions below.
- Crumble ground turkey in a pan with a drizzle of olive oil. Add minced garlic and seasonings to taste.
- While the meat is cooking, cut your spaghetti squash in half (the long way), wrap the halves in a paper towel, and microwave them separately for ~3-5 minutes each. You of course have the option to cook them in the oven.
- Once the meat is mostly cooked through, add the vegetables, sauce and remaining garlic and stir for 4-6 minutes.
- Scrape the spaghetti squash into a bowl, discarding the seeds and squishy top.
- Mix meat sauce creation into your bowl and enjoy!
All in all, you should be done cooking and inhaling in around 20 minutes.
