Let me start by saying that I thought I invented the term “faux-tmeal.”
I was pretty bummed when I Googled it and discovered that many food bloggers have already coined the term. I did come up with this recipe all on my own, though!
I thought it up since I’ve been doing my own version of Whole30. Essentially for the last ~20 days, I’ve cut grains/wheat, added sugar, alcohol, dairy, soy and legumes out of my diet. I’m giving it a try to reduce inflammation in my achy knees and I’ll definitely write a blog post about it when I’m done.
With all of that said, I know that my faux-tmeal recipe wouldn’t be considered “Whole 30 approved,” because the diet urges participants to avoid indulgent cheat recipes. For me, the purpose of the diet was to reduce inflammation, so it didn’t bother me to stretch the rules.
I know that cauliflower for breakfast sounds unappetizing, but it really absorbs the taste of the bananas and almond butter. The whole thing is nutty, creamy, delicious and full of fiber.
I’ve mentioned this before, but I really just eyeball when I cook, so the measurements aren’t exact. Feel free to add anything to taste.
Enjoy!
Ingredients:
- A scoop or two of Trader Joe’s Riced Cauliflower. (You can also rice your own cauliflower with the instructions here).
- A spoonful or two of almond butter
- One ripe banana
- A sprinkle of cinnamon
Optional toppings: dates, fresh fruit, walnuts, cacao nibs.
Step 1:
Pour riced cauliflower into a bowl and add a scoop or two of almond butter. Place into the microwave for about 1 minute.
Step 2:
Add one banana and slice it up with your spoon. Mash it up until the whole bowl becomes one texture.
Step 3:Add a sprinkle of cinnamon, mix again and enjoy! I LOVE cinnamon, so I’m a little heavy-handed.
Step 4:
Eat in front of your dog until he cries because he wants some too.
